Countdown to tomorrow

Well, the bird is in its cold bath to thaw, the sweet potatos are int he oven to finish cooking and the white potatos are on to boil.

Recipes:

Sweet potatos

4 medium sweet potatos or yams
1 cup brown sugar, packed
1 cube butter
1/4 cup water
cinnamon, to taste
nutmeg, to taste

Cut sweet potatos in half, place in pot, cover with water and boil until soft. Drain and allow to cool. Remove peels and slice into baking dish.

Melt butter and add brown sugar and water and cook over medium heat until brown sugar is disolved and you have a sypur. Add spices to taste and then pour over sweet potatos and bake in oven set to 350 degrees for 45 minutes.

Mashed potatos

10-12 medium potatos
8 oz cream cheese
1 cube butter
1 cup sour cream

Peel and cube potatos, pout in pot and cover with water. Boil potatos until soft and drain. Mash potatos with potato masher, add butter, sour cream and cream cheese and mix together.

These I am doing tonight and they will reheat int he morciwave so I don't have to spend the entire day in the kitchen. I will be doing to kinds of dressing tomorrow, one to go inthe bird and another that will just cook in a cassarole. I'll be doing my regular stuffing for the bird and a apple-walnut dressing for the cassarole (hubby love his dressing so this way we will have LOTS).
