Yum!

So we got ourselves a nice big turkey and did it up right. I made gluten free bread for the stuffing: Stuff and prep the bird and shoot it up with wine: Cook everything up, reheat the pre-made sides and then settle down for a feast: Seriously yum! Most of dinner was gluten free. The stuffing was very tasty, tho the bread didn't hold the texture and ended up being more of a couscous texture. Once I got used to that I was very happy. No one noticed that just about everything else was gluten free and the regular bread dressing I'd made for them came out pretty well too. So I didn't miss gluten/wheat in my turkey dinner at all. Was going thru my pantry last night when I came across a package of gluten free pancake mix I had gotten a while back for when I have gluten intolerant friends over. So needless to say, I had a very yummy breakfast this morning: Fried ham and totally delicious pancakes. Hubby liked them better then regular Bisquick pancakes.

Hopefully all my American friends are having a good one and hope all my non-American friends are having a good day where ever you are :) The turkey is in the oven, crammed full of stuffing made with two loaves of the Bob's Red Mill GF bread mix I did yesterday in the bread machine. I even have enough to put in a little casserole to bake later. I will make the regular bread dressing for the rest of the people a bit later. That will go in the oven when the bird comes out. The sides are all thawing in the fridge and I have everything I need for the green bean casserole. The house is already smelling yummy from the turkey. Dinner will be about 4pm. Will have lots of pictures tomorrow. Got the Tig into the house yesterday. He's only made half hearted attempts to go back out side. I think he's finally realized that it is so much nicer inside.

Dear Mother Nature

You can stop now, I think we have plenty of snow to last us a while: Rum Tum is an extremely happy kitten. My mom and brother flew in yesterday, tho they couldn't land at the Moscow-Pullman airport. They went to Lewiston. Hubby wasn't well enough to drive down to get them and I would have been a complete and total wreak if I tried. So they came up via Valley Transit and got stuck a few miles south of Moscow when there was a serious slide off of a tractor trailer or two. They didn't get into Moscow until after 7. We picked them up at the SUB and hit Arby's to get them dinner and then to their hotel. Original plans were, hotel and then out for dinner, but hubby was getting anxious about our road and wanted to get home ASAP. The road wasn't too bad and we got home okay. I don' think the winds they were predicting for our area arrived, which is a good thing. Was hoping for a snow day, but no such luck. Mom was going to rent a car, but after seeing t

Nice weekend

Hit Winco yesterday and picked up the turkey and quite a few of the fixin's for Thursday. The bird is in the fridge thawing. Also picked up a ham to fix for Wednesday dinner. Will have some of the ham for turkey day for a little variety. Got the yams on for the sweet potato casserole. Picked up a couple packages of Bob's Red Mill GF bread mix to make the stuffing for the bird. Also picked up rice flour for whatever flour I need for other recipes. The pumpkin pies will not be GF, I usually have some filling leftover, so I will freeze that into a couple of containers I can pop in the oven to bake for my dessert. I'll pick up the stuff I need for the green bean casserole on Wednesday since I will want it fresh. Got season 2 of Dexter on thru Netflix. Have a couple DVDs still to watch and then get those sent back. Tea is on, laundry is in the dryer and a lot of puttering is going to happen.

Woke up to this this morning

It didn't stick around too long as it was warming up pretty rapidly. Rum Tum was a happy kitten for the short while we had snow. Still need to get the snow shovel out of the shed before we start getting more. Going to get really cold in the next few days. I am so not ready for it. Need to get that one last window done and we should be okay for the duration.

Yikes! A seriously wild and woolly night!!!!!!

They clocked a gust out at the airport this morning at 85 mph about 1:30 am. I, of course, was awake to feel it as the power went out at 1am and the CPAPs turned off, as did the furnace. We puttered about a bit, got alternative heating ready, hubby went out to lower the flag pole before it snapped off and got the inverter out of the car (we'd taken it from the bedroom for some reason and forgot to bring it back in) and got the CPAPs up and running on the battery and went back to bed. Power came back on again about 2:15. So we went back to house power. Big mistake. The CPAPs kept blipping on and off with the power fluctuations all night. Should have kept them on the battery. We'll know if it happens next time. Just aren't used to the power being that flaky all night. Power went out again about 6am, so finally got up. Lit the oil lamps, brought in the little dragon and fired up the butane burner to heat water for coffee. Pulled out the emergency radio and hubby hooked t

Cold, icky Monday

So the rest of the weekend was pretty quiet. We went to Lewiston/Clarkston to do some shopping and show some friends who are new to the area around. Scored more Danish blue cheese at the Grocery Outlet, along with some Edam cheese. I'd told a friend about the blue cheese, so picked her up a couple of wedges while we were there. Stocked up on corn tortillas at Costco and more sliced cheese and frozen boneless, skinless chicken thighs. Had a nice day showing our friends around. Pity the weather hadn't been better. We'd hoped to take them down the Spiral Highway, but the fog was way too thick most of the way down, so we decided that it would be safer to stay on the new grade. Dinner Sunday night was pretty easy. I sliced a roast thin with the slicer and cooked it up with a Mexican spice blend I have. The I did the tortillas on the griddle with cheese and added the beef. Food is NOT supposed to hurt you. So I am officially declaring myself wheat/gluten intolerant. I'm not going to bother with the blood test since I really don't want to be in this kind of pain for the next several weeks. Just going to jettison wheat/gluten from my life and go from there. I did pancakes this morning with regular Bisquick. Had 3. Within 15 minutes the familiar bloaty feeling started and shortly there after the pain arrived. SIGH!! Luckily it is easier now then it used to be. I've friends who've been struggling with this for quite a while and I remember when they first started. They had a hell of a time finding things they could eat that wasn't loaded with gluten of some sort. Since I was bringing things to pot lucks and such I started reading labels, so at least I now know what to look for. Just going to have to deal with the adjustment period. This bloody well sucks big time. But just have to accept it and move on.

AHHHHHHH! Friday!

Not too much planned for the weekend. Mostly kick back and relax (and finish cold proofing the house). I do want to try and get the pies for turkey day done and in the deep freeze and possibly another side. Picked up a Tumblr account. Mostly to showcase my photos without too much else cluttering things. While I have my blog and my Flickr account, I post just about everything to my Flickr, so for purposes of showing off my better stuff, I think the Tumblr account will work, esp for getting it seen. This is not boding well

We did Winco fried chicken for dinner last night since I was literally starving and in no mood to cook and I developed that familiar icky feeling I was getting when eating anything wheat. SIGH!!! I was hoping that if there was flour in the chicken coating (and someone mentioned in passing a week or so ago that they didn't eat Winco fried chicken as it was not gluten free) that there wasn't enough in it to be a problem. DOUBLE SIGH!!!!! Not looking real good for deliberately going back onto wheat this weekend. I am SOOOOO looking forward to pancakes, waffles and sandwiches. Not to mention PIZZA!!!!!!!! All easily made or bought at the store and not cost an arm and a leg. We'll see. So happy to wake up this morning and there was no snow. They were predicting the possibility of some. I am so not ready for snow, it can hold off until Christmas. Snow for Christmas is good, makes the holiday more sparkly.

Count down to turkey day

17 days until the big day. To that end I now have the mashed potatoes in the freezer so those are out of the way. I'll look at making the pies this next weekend and look at the sweet potato side. Haven't decided on my traditional sweet potatoes or go with the sweet potato casserole I did a couple years ago. Leaning towards the sweet potato bake tho. If I do AB's green bean casserole , I will probably do that a day or two a head of time. Then all I have to deal with on the big day is the turkey, dressing and gravy. Have to decide how much of the dinner is going to be gluten free. The pies won't be and the stuffing won't be, but I think the gravy will be since I find that white rice flour does a really nice job, better then flour and I don't get all the floury lumps. If I go with the sweet potato casserole I'll probably use rice flour for the topping instead of regular flour. Do the same with the green bean casserole and just eliminate the bread crumbs.

Thank the Ghodz it is all over, at least for a while

If I had to hear or see one more campaign ad I was going to go postal, and I usually can avoid them either zipping thru them or hitting the mute button! Bad enough they are on all the time, but dammit! I want them OFF THE AIR on election day! People usually have made up their minds and running the &%^$# on election day isn't going to change any. But at least the commercials are back to the usual inane crap they usually run and it is easier to ignore them. So I voted 1st thing Tuesday morning and woke up Wednesday morning to find that Latah County at least had some sense and didn't elect the two tea party bozos who haven't a clue. Been working on a lot of designs for my zazzle shop . Zazzle has been running a bit wonky of late, so it has been taking quite a bit of time to get things posted. But I am getting there. AHHHHH!!!! Pizza!

Finally got to try making a gluten free pizza yesterday. Picked up a box of Gluten Free Bisquick and followed the recipe on the box. Made the sauce earlier in the day so the flavors had a chance to meld and had picked up crimini mushrooms, black olives, pizza dough and shredded cheese the day before. Got the hubby's pizza going first. I'd let the pizza dough warm and rise for several hours and topped it it wit the fixin's and into the oven. I then made the GF dough, using olive oil for the oil. Popped it in with hubby's pizza to pre-bake. When hubby's pizza came out, my crust was ready to top and then back into the oven to finish baking. YUM!!!!!! Okay, the crust is very Bisquicky, but I grew up on it, so the texture wasn't off and I was rather expecting it (hubby didn't care for it tho) and this will be my fall back for when I want pizza and I haven't come up with another option to have on hand. Can't wait for lunch to see how the le
