ACK! Cold, wet and icky!

and I put the inserts into the windows yesterday. Still have to seal around them and make an insert for the little kitchen window. Normally I put plastic over it so I can still see out while I am doing the dishes, but with the predictions of a very cold winter and the window really leaking like a sieve (darn things is getting even more warped and not shutting snuggly), an insert it will have. So Saturday we went down to Lewiston for some shopping. First thing we did was find a place for breakfast. We hit a new place called Matt's Grill. I think it used to be something else (Grandma's Old Town Cafe maybe? The address for that one is about right). But anyways: First thing once in the door was the waitress said to sit anywhere. So we found a spot and settled in and she asked if we wanted anything to drink. COFFEEE!!!!!!!! So next question was "creamer" Oh yes! Half and half or flavored. Overnight temps are getting seriously cold. I've started bringing in the inserts to seal windows. Have to finish taping off the bedroom window and bring in the insert for the back door. We've currently got a chunk of reflectix over it and a very confused Rum Tum who was trying to figure out where the back door disappeared to. Wait 'til the rest of the windows disappear, he is going to be one very unhappy kitty LOL! A pretty nice weekend. Friday night made more falafel patties, this time I didn't mix the rice flour in using the food processor, but by hand. I also poured some olive oil onto the electric griddle and cooked them on it. Came out nicely, tho I will have to come up with something to add some moisture to the patties as they were a bit dry. Maybe add a bit of olive oil to the mix. Once those were done I then soft fried some corn tortillas on the griddle and then made falafel tacos with cheese, roma tomatoes and tzatziki sauce. YUM!!!! Saturday started WAY

Gluten free of course: Have to work on the recipe for the falafel tho, the patties kind of disintegrated in the oil while I was frying them. I think more rice flour (and look for brown rice flour) and use the electric griddle with a little olive oil on it to cook them next time. Have to see about making a big batch next time so I can have some for the freezer. Have to decide whether to freeze them cooked or uncooked. They tasted yummy tho. I'd made some tzatziki and hubby had his in some honey wheat pita and I simply made a salad of mine, topped with avocado and tomatoes. Leftovers made a very yummy lunch. Managed to get the Tigger kitty in the house the last two nights. Have to scoop him up off the porch after coaxing him up with food. He isn't really too happy about being in all night, lets us know in very loud and no uncertain terms LOL. We will have to work on getting him box trained, he used the bathroom carpet sometime in the wee hours of the morning. He does kn

Elk roast with sweet potato fries and gravy , originally uploaded by JeanC38 . So I discovered I had an elk roast hiding in the deep freeze, so I decided that would be dinner last night. I browned it in an oven safe pan with some olive oil, sweet onions and mushrooms. Seasoned the roast with some kosher salt and pepper and then a goodly dose of balsamic vinegar just before putting it in the oven to finish cooking. When the roast was out and resting, I decided I wanted gravy, so popped 3 tablespoons butter in to melt in the pan and mixed in the onions and 'shrooms. I then sprinkled in rice flour, instead of wheat flour and made my gravy from there. Came out totally rich, thick and delish! Hubby hadn't realized it wasn't my regular gravy with wheat flour until I told him. So now I know I can make nice thick gravy gluten free. So the gluten/wheat free journey continues. Been feeling a bit better and not sure if it is coincidence or not, but most of the really annoying minor joint aches and pains have disappeared. Had a serious jonesing this last week for pasta, discovered Winco has brown rice elbow macaroni, so I did that with a nice meat sauce: Came out pretty good, need to work on cooking the macaroni properly. Hubby really wanted pizza yesterday, so we picked up pizza makings and I got creative. For him we picked up some already made pizza dough. I made a nice sauce with tomato paste, garlic, Italian herbs and a bit of balsamic vinegar. Made his pizza with sliced white 'shrooms, sweet onion and black olives with cheese. For mine, I soften some corn tortillas in olive oil and then onto a cookie sheet and built my mini pizzas on those: YUM!!!!!!! I will look for a gluten free version of pizza dough for the future.

Blech! Even tho we were in bed early, waking up this morning was really, really difficult. Course, not being able to sleep thru the night didn't help much. I did have a short conversation with Tigger about 5 am when nature called. I just wish he wouldn't dive out the window. If he didn't want me to know he was there he shouldn't have spoken first. Oh well, at least he is still coming in and I am sure he is sticking around for part of the night. I just need to get him to come in earlier so I can start closing the kitty window again. Esp when it is raining out. Rum Tum gains about 15 pounds when he gets soaking wet! He's a very absorbent kitty. Thankfully he was kind enough to NOT jump into bed with us while sopping wet. Went fishing on Saturday. Lousy luck, but still a good days fishing. oh fribble and TOSH!!

Gotta go off wheat and gluten for a while. Spent most of this week in utter pain and misery whenever I've eaten anything mostly wheat (pizza, sandwiches). So I get to be creative with whatever I have in the cold boxes and pantries that don't have wheat. Good thing I don't mind coming up with new dishes for meals. Time to inventory the kitchen. So lunch today is a nice big avocado and some leftover jasmine rice with butter (need to pick up another bag of jasmine rice, I am almost out). Speaking of gluten free, discovered a wonderfully yummy Greek yogurt at Winco the other night. It is Zoi Greek yogurt and I am putting it on the regular shopping list. Talk about YUM!!!! and gluten free. I am still trying to grasp the concept of fat free Greek yogurt, so won't be buying those. The plain regular is tres delish on its own and when I had some with a packet of Truvia and a splash of vanilla in it I was in heaven. No need to buy the flavored ones, I'll just buy the qua
