Sunshiny day!

Tho a bit chilly, but the sun is out. Woke up to snow on Saturday, that was a big surprise. Luckily it only stuck around in the mountains where it's added to the snow pack.

Saturday we grabbed B from next door and headed down to Lewiston for shopping. She needed to get away for a while. She does taxes for people part time and REALLY needed a break after finishing them up this week.

We hit Costco, managed to get in and out spending only $70, mostly becasue we didn't need to buy any meat. I did pick up more feta, shredded mozzarella and shredded cheddar. We bought a bag of the Kirkland kitty chow for the other neighbors since Nicky and Rum Tum insist on thinking they can just eat when and what they want over there :P I'm hoping that if Rum Tum discovers they have the same food, he'll stop eating there, as it was, the D brought the little snot home late Sat night after Rum Tum had eaten his fill and was settling down over there for the night LOL I have to keep reminding him he lives with US, not at the neighbors hehehehehe I guess he just thinks the entire neighborhood is his home. He makes himself comfortable over at B's house too.

Was in the mood for stuffed portabellos, so I picked up a 4 pack while at Costco and Saturday night made those. I cut the stem off each one, sprinkled the caps with olive oil and white basalmic vinegar to marinate, then chopped the stems into a fine dice and mixed them with panko bread crumbs, feta cheese, a bit more olive oil and basalmic. The caps I put into a baking dish and baked them for about 10 minutes, then added the stuffing for a few more minutes to heat thru and then turned on the broiler. I served them with saffrom rice. A very tasty dinner.

Yesterday I baked the ham, used cherry vanilla Dr Pepper, came out yummy. I also whipped up half a batch of mead to see if it works. Should get 2.5 gals if it does. Used one 6 lb bottle of honey and half a packet of champagne yeast. If it works, I'll use the other bottle of honey and the rest of the yeast and lay in more mead.

Hubby's business is really starting to take off. We're also looking at raising his rates $5 an hour. We don't want to go too high, but he needs to be charging a little bit more then he is now. We need to talk to B in regards to taxes, we're so used to him making so little every year and getting back lots. But so far this year he's made more since Jan then he made all last year. But it is good for him to be busy. We're going to pop over to Shopko tonight to get him some more shirts and slacks for work so he looks more professional.
