Success!

The addition of the sesame oil was what the cassoulet needed and it was yum. With all the yummy food at the luncheon I still have about half of it left. If I'm not feeling creative tonight, it will be dinner, along with what's left of the sourdough bread.

So here is the recipes:

Cassoulet:

2 small - med onions, quarterd and sliced
2 tbs butter
pinch kosher salt
2 lbs dried beans, soaked
1/4 lb bacon
1-2 lb pork loin, cubed
4 cups turkey stock
1/4 cup white wine
1 bay leaf
ground pepper
3 tbp tomato paste
1 heaping tsp of chopped garlic
3 tbs sesame oil


Sort beans for stones and rinse. Place in pot and cover with water up to 2 inches over beans. Bring to boil, remove from heat and cover and let sit for 1 hour (beans van be soaked over night in cold water).

While beans are soaking. Quarter and slice 2 small onion. Add butter to 8 qt dutch oven and add onions with a pinch of kosher salt. Sweat over medium heat until golden brown and sweat. Remove from pot and set aside.

Coarse slice bacon and add to dutch oven and cook over medium heat until slightly crispy. Scoop out bacon, reserving bacon fat (if more then 2 tbs remain, pour off all but 2 Tbs). Cube pork loin and in batches brown the pieces (add a bit of olive oil if there isn't enough bacon fat left after a batch
or two).

Preheat oven to 300F

Leave a layer of pork loin on bottom of dutch oven, add half of the reserved onions and bacon bits. Add half of the soaked and drained beans. Add in bay leaf and sprinkle with black pepper. Layer again with pork cubes, beans and top with onion and bacon. Pour in whine and turkey stock and cover.

Cook in 300F oven for 2 1/2 hours and check. If it looks like the beans have soaked up all the liquid, add some more. Add tomato paste, sesame oil, garlic and additional kosher salt if needed and stir cassoulet and turn oven up to 350 for an additional hour.

Sourdough bread:

Dry ingredients:

3 cups bread flour
2 1/14 tsp yeast
1 tsp baking soda
1 tsp salt

Wet ingredients:

1 cup sour dough starter
1/2 cup warm water
1/4 cup melted butter
1 lg egg, slightly beaten

Mix, knead, oil bowl
1st rise
Punch down, 2nd rise
Shape into loaf of choice, 3rd rise
Bake at 375F for 40 minutes
Test for doneness and cool.

Crust - Soft:

Brush loaf with melted butter once out of the oven
